WHAT IS CABEZA? WELL, IT IS NOT BRAIN!
WHAT “CABEZA” WHEN YOU SEE IT ON THE MENU?
Cabeza
means “head”, it is a Mexican term used to describe the meat from a roasted head
of a beef animal. In other words it is NOT the brain of an Animal my American
friends.
Basically, the whole head is placed on a steamer until
cooked, and then the meat just comes off of the head. Believe me, it is tender
and delicious.
Next time you come to Charlie’s Tacos order your self some
Cabeza. Believe me you are in for a real treat!
