WHAT IS CABEZA? WELL, IT IS NOT BRAIN!

WHAT “CABEZA” WHEN YOU SEE IT ON THE MENU? Cabeza means “head”, it is a Mexican term used to describe the meat from a roasted head of a beef animal. In other words it is NOT the brain of an Animal my American friends. Basically, the whole head is placed on a steamer until cooked, and then the meat just comes off of the head. WHAT IS BIRRIA? This is dedicated to my Americano amigos. First off...BIRRIA is DELICIOUS. I remember as I was traveling in Tuscany, Italy. I was enjoying with my wife a great 2- year anniversary vacation. We ended up in this mom and pop restaurant where they specialized in Wild Boar Stew, and let me tell you, I enjoyed it so much I brought it back home (don’t ask me how I did it). Although, to get the Wild Boar Stew again, then going back to Italy is the only option, as I know no one here in Highland Park sells Wild Boar Stew. Although Birria my friends, this recipe or dish come from Jalisco, Mexico! Also you don’t have to go to Jalisco Mexico to try it. It is right on your backyard at Charlie’s Tacos . Birra is basically a spicy stew, made of different kind of meats, Beef (Chuck Roast), Lamb, Chicken, or Goat Meat, but at Charlie’s Tacos , they specialize in Beef (Chuck Roast). As a truck driver, Charlie’s employer was diminishing his hours, and he needed to make some extra income for his family. So he started selling Tacos in front of his house.  The rest was history. What makes Charlie’s Tacos so special and SO GOOD? We will have to go back in time, where is his father was born. Charlie’s Tacos recipe comes all they from Jalisco, Mexico. The recipe and cooking techniques comes from his father Carlos who owned a catering business in Highland Park, and taught Charlie the traditional cooking styles of Jalisco; and, with followers all over Los Angeles, and making his mark in the Highland Park Community.
