WHAT IS CABEZA? WELL, IT IS NOT BRAIN!
WHAT “CABEZA” WHEN YOU SEE IT ON THE MENU? Cabeza means “head”, it is a Mexican term used to describe the meat from a roasted head of a beef animal. In other words it is NOT the brain of an Animal my American friends. Basically, the whole head is placed on a steamer until cooked, and then the meat just comes off of the head.
